I just love this time of year. The air gets little cooler; the days a little shorter. The world gets a little more colorful and life gets a little slower. Summer is always so fun but so busy! Fall brings a new school year for the kiddos and slowly you fall back into a routine. However, the first few weeks of a new school year can be a little bit crazy. We wanted to share an easy, healthy dinner recipe to make those first few weeks back at school a little bit better. This is a family favorite at our house, Taco Soup. This quick and easy meal is perfect for those cool, Fall evenings. Enjoy!
EASY Taco Soup
1 lb lean ground beef
1 package taco seasoning
1 16 oz can kidney beans, drained
1 8 oz can tomato sauce
1 medium onion
1 16 oz can corn
1 28 oz can stewed tomatoes (you can also use Mexican flavored tomatoes)
Brown hamburger, drain grease. Sauté onion and add to hamburger. In a saucepan combine hamburger and onion mixture, taco seasoning, corn, kidney beans, stewed tomatoes and tomato sauce. Simmer 20-30 minutes. Serve topped with tortilla chips, sour cream and cheese to your liking.
